Mmmmmm Breakfast. I rarely have time for a fancy breakfast. Fancy being eggs, bacon, sausages, pancakes/waffles, apple, orange juice, hash browns and all that. A good simple breakfast is what I need. I make my lunches ahead of time, so why not breakfast? Most store bought (and by most I mean 99.9%) breakfast cereals are full of sugar. Usually the ingredients list goes something like this, “Crap, sugar, more crap.” It turns out quite a number of people out there have breakfast figured out. Here’s my variation on those themes. It seems quite healthy and a whole lot more filling than bangers and pancakes.
Not pictured is almond milk and the steel cut oats. The look like regular oatmeal put through a bladed coffee grinder or blender.
I usually make these up in batches of three and stick them in the refrigerator till it’s time to eat. Here’s the quantities of each I use of each ingredient:
- 1/4 cup steel cut oats
- 1/4 cup salad topper light (sunflower seeds, pumpkin seeds, dried cranberries.)
- 1/4 cup Qi’a cereal (this must be one of the 0.1% of cereals that are actually good for you.)
- 1 tablespoon unsweetened shredded coconut
- 1 tablespoon raw pumpkin seeds
- 1 tablespoon almonds
- 1 tablespoon avocado oil
- 2-6 drops of vitamin D3 (depending on season)
- 1 drop oregano oil
- 1 teaspoon spirulina powder.
- 1/4 to 1/2 cup almond milk
That is really quite a lot of calories, but I also exercise regularly and don’t eat a whole lot of junk food snacks. Here’s the total combined nutritional breakdown of all that combined.
